Question about unemployability

My ex was originally (I think - based on what he could "remember") rated at 70% disability. He said it was for depression. But based on the VA's definition of 70%, it seems like he should have been a LOT worse than he appeared. After 6 months or so together, he was re-assessed at 100% for unemployable so that he's able to live off of his disability. Here's the thing: he is able to teach martial arts and is in phenomenal physical shape. He trains martial arts 6 days a week for several hours a day, in addition to going to the gym 4-5 times a week, and teaching 4 days a week. In fact, he seems like he's able to do pretty much everything, but he only does it if he feels like it. And the reason we broke up was because he was constantly lying and manipulating. Are these actually characteristics of disability? I don't want to misjudge someone if that's the case. I don't have any experience with this sort of thing.
